Turkey gravy in the Walk-In Cooler was measured to be about 38 degrees F and sliced American cheese in the three door Reach-In Cooler was measured to be about 43 degrees F. Gave the Food Service Supervisor a copy of the Time As A Public Health Control handout so that they can review the requirements and determine if this would be a viable alternative for food displayed at their salad bar. The Wash Temperature on the Mechanical Dishwasher was read as 163 degrees F and the Final Rinse Temperature read 190 degrees F. Report e-mailed.

Comments: Discussed deficiencies with the manager. Food items in the refrigeration units were measured to be below 45 degrees F and the food items hot held on the serving line were measured to be above 140 degrees F. The air temperature in the Milk Cooler was measured to be 37 degrees F and the rinse temperature on the Mechanical Dish Washer was about 184 degrees F. Manager mentioned that they are going to convert the Middle School Cafeteria into a Culinary Class Room using the existing equipment. They plan on having all of the equipment checked and running by the middle of May 2016. Report e-mailed.

The following temperatures were measured (degrees F): Roasted chicken in the walk-in cooler - 39.3; On the Salad Bar line - Sliced Tomatoes - 439 & Baked Beans - 44.1; Milk Cooler - Carton of Milk - 36.9; Hot Holding Line - Macaroni & Cheese - 170.8. Measured the temperature of a Chicken & Cheese sandwich and obtained 52.4 degrees F. The operator stated that these sandwiches are kept at this temperature for less than two hours and then discarded in the garbage. The rinse temperature on the automatic dishwasher was 188 degrees F.
