Comments: Raw sausage temped at 37 degrees; raw chicken breast temped at 41 degrees in walk in cooler. Discussed need to keep lids of prep stations closed when not working on an order to keep temperatures at or below 45 degrees. Discussed complaint with cook. He states that employees were made aware of the complaint by the customer at the time of incident. Purell hand sanitizer used by waitresses/cashiers at register after handling money. Pizza was uncooked and then put into oven by cashier after using hand sanitizer. Customer was concerned with chemicals in sanitizer, however sanitizer appears to be food safe when used appropriately. Inspector discussed need to still wash hands frequently and use gloves when necessary despite hand sanitizer being available. Use not seen at time of inspection.

Comments: Measured the temperature of Sausage Strips (45 degrees F) and Buffalo Chicken Cubes (35 degrees F) in the Upper Compartment of the Bain Marie by the Oven. Temperatures were an improvement over the previous inspection and recommended to the operator that they fill the containers no higher that the inside rim, which will keep the food completely in the cooling air. The previous critical deficiency has been corrected. Report e-mailed.
