Because of this, it is recommended that you use Time as a Public Health Control for both the hot and cold potentially hazardous foods that are removed from temperature control and placed on the service line. TPHC was discussed and the TPHC fact sheet was provided. Please submit in writing a request to use TPHC for potentially hazardous cold and hot foods that are placed on the service line. Also, a table must be placed behind the service line where the food will be stored and served. The plates of food will then be passed or placed on the service line for the patrons.
