The following food temperatures were measured (degrees F): Pasta Salad - 46.3, Tuna Salad - 41.7, Chicken Strips - 47.9, Meatballs - 39.7, Potato Salad - 50.1. The Potato Salad was prepared from mayonnaise at 70 to 75 degrees F and just cooked potatoes that were cooled under running water. The temperature of the potatoes was not measured before they were used to make the salad, so they could have been higher than the temperature of the water or room temperature. Suggested that the operator verify the temperature of any food items that are used in the preparation of these kinds of salads before the preparation takes place. Item 10B: Non-food contact surfaces and equipment are improperly designed, constructed, installed, maintained (equipment not readily accessible for cleaning, surface not smooth finish) Comments: Coil on underside of cooler was discovered to be broken at 9:00am by operator. Maintenance worker came by during day and took broken coil and returned with a new one at time of inspection. Air conditioning was broken in facility as well so this did not help ingredients stay at adequate temperature. When cold holding ingredients, temperatures should be monitored at all times- especially in situations like these. If items rise above 45 degrees, steps to lower temperatures are to be taken such as placing them in separate cooler or placing a lid on item. |
