Comments: - Facility has contracts with Sweeney's pest control once per month for monitoring and Riverside once/year for fire ext. and range/hood inspection and cleaning. - Suggestion to owner to keep take-home containers inverted on shelf and tupperware in sink cabinet inverted and off bottom of cabinet. - Discussed designating a handwash sink; post sticker and keep hand soap and papertowels there. Labeling other sinks is helpful, for example mop/dump, service ice, etc. Reminder to continue to keep beer cooler shelving sanitary for inverted can storage and product raised off bottom of cooler to protect from any possible contamination. Facility is exceptionally clean and organized. -Due to lack of indirect plumbing, food prep is done in kitchen two-bay sink prior to opening when sink not in use for warewashing and colanders are used as needed. Menu is limited to low prep items. Facility has numerous sinks and takes care to institute best practices.
