Comments: The hot temperature dishwasher was operating in the wash cycle at 150 F degrees and at 180 F degrees in the rinse cycle as per manufacturers specification. Test strips were available and used to evaluate sanitizing solution strength which was at 150 ppm. It is suggested that food service staff attend a Servsafe training course. All hot held foods were 140 F degrees or higher and all cold holding foods were 45 F degrees or below.
