Comments: The upstairs catering kitchen are progressing. Fire protection and plumbing are scheduled to be performed after winter carnival and are tentatively hoping to be in the kitchen by the end of the summer 2019. Thermometers were calibrated on site and found to be accurate. Three bay dishwashing was discussed. An employee sick foodworker policy was discussed. All cold and hot holding temperatures were found to be acceptable.

Comments: Outstanding cleaning and structural items will be corrected with the renovations to take place during the 1st quarter 2018. repeat violations with the counters and cabinets in the main deli serving and prep area will be repaired the second week in January. Cooking, cooling and reheating procedures for potato salad, soups, meats and sauces were discussed. catering cooking and transport was discussed. the spray wand was elevated at the time of the inspection however still drapes below the lip of the drain when not hung. A permanent fix is recommended. Keeping the hose on the front of the building hung and applying a hose bib vacuum breaker attached was discussed.

Temperatures of soups and sauces on the beverage storage shelving in the walkin cooler were marginally at 45 degrees F. Temperatures improved in the rear of the walkin. Though storage in this refrigerator has improved, it is strongly recommended that a walkin cooler be incorporated in construction of the new kitchen.
