Discussed. proper procedure (3 - step) for washing cafeteria tables (wash, rinse and sanitizer). Serving cheeseburgers and sweet potato fries. Food obtained frozen from SLHS and cooked on-site.

Comments: Cooked potatoes in hot holding were being held at 150 DF. Facility thermometer was calibrated correctly. Cold holding units were holding food below 45 DF. Dishwasher is a sanitizing dishwasher and sanitizer was detected in rinse water. It took dish washer multiple runs to reach minimum required wash temperature of 120 degrees F. Recommend a service call if dishwasher is unable to reach 120 DF. All food at school is obtained from Saranac Lake High School. Food temperatures are taken upon receipt. Reviewed food temperature logs and discussed various scenarios where out of temperature food should not be served.

As per chef, the cafeteria is awaiting delivery of a new front area refrigerator and dishwasher, but is not sure when they will be delivered. She indicated that the dishwasher has a wash temperature of about 160 degrees F. and a final rinse of 180 degrees F. and has been working properly. Food temperatures obtained with DOH thermocouple thermometer (cheeseburger 165 degrees F., sweet potato fries and fruit salad were available on lunch menu but children ate them all-no portions available for testing), pint of 1 percent low fat milk 43 degrees F.

Comments: Education was provided about proper washing, rinsing and sanitizing to operators. Food temperatures were obtained from serving line as follows: Egg, ham and cheese sandwich on English muffin at 156.3 deg. F., sweet potato tots at 160.3 deg. F. All previous violations from previous inspection on 11/20/14 have been corrected. After inspection, a Mr. Raymond Dora (reached at 518-891-2830) from the school called to indicate that the female operator uses the female restroom (which was not shown during inspection) and there is a covered receptacle in this room. Mr. Dora was informed that this would be noted. This is a revised report.
