Observed staff peeling vegetables for vegetable soup. Observed proper glove use and hair restraints. Product thermometer available. Discussed cooling and hot-holding procedures. Kitchen observed to be kept very clean and well-maintained.

Comments: Kitchen very clean. Discussed proper cooling of food in single trays and portions no deeper than 4 inches. Chef states that he will only stack trays after the food is fully cooked. One reach in cooler had an inaccurate built in thermometer but the inside thermometer showed 40 degrees Fahrenheit and the chicken in the middle tray of a stack of trays was at 40 degrees Fahrenheit. All emergency lights in kitchen have been repaired since last inspection.

Comments: Walk in cooler that was not properly working during the pre-operational inspection was now working correctly and at 40 degrees F. Pasta temped at 40 degrees F in reach in cooler reading 48 degrees on built in temp gauge. Chef said it may be because he just put warm food in to cool. Reach in on right side was not working properly and was not in use.

Comments: Kitchen very clean. Head chef explained how he cools trays of food spread out on shelves and once fully cool then sometimes stacks them. Ice machine had a good scoop holder. Discussed cleaning procedure of wash rinse and sanitize. Currently breaking chicken to be returned to the refrigerator and then cooked and immediately served at dinner.
