Chlorine test strips readily available on-site. Product thermometers stored in lockbox with sign-out book for inmates. Temperature logs maintained for all coolers and freezers. One freezer temporarily shut down for repairs. Kitchen floors recently redone to be easily cleanable. Facility observed to be kept very neat and well-maintained.

Operator stated that the baths are brought to a boil beginning at approx. 8am and once the bags are placed inside the water is brought to and held at a simmer until service time. When bags are removed from the simmer, they are opened into shallow metal trays and temperatures are checked and recorded prior to service.
