Comments: Comment only: In discussion with owner, Eugene Servelli, dirty mop water is dumped outside on the ground surface. I did not see this occur during the inspection, so its not a violation. Reminded Eugene that dirty mop water must be disposed of in a sanitary manner. Dumping dirty mop water on the ground surface, in a ware washing sink, employee handwash sink, food prep sink, and toilet are prohibited. Must correct all violations no later than 1/15/16. Must send Corey DiLorenzo an email to [email protected] addressing corrective actions taken to all cited violations no later than 1/15/16.

It was observed that chlorine level in water has not been recorded since 10/3/14. this must be measured and recorded every day. Also, water testing kit can not read levels greater than 1ppm. Highly suggest obtaining scale that reads greater than 1ppm. At time of inspection chlorine level was roughly 3ppm.
