Comments: Chicken riggies, gravy, scalloped potatoes, mashed potatoes and green beans observed at temperatures ranging from 145-187 degrees Fahrenheit. Cold holding temperature of ham slices and sliced tomatoes stored in upper portion of deli unit observed at a temperature of 44 degrees Fahrenheit. Product stem food thermometer evaluated for accuracy. Discussed cooling procedures; facility cools in shallow pans and then product is transferred to larger/deeper containers. Ice machine is currently non-functional; will be repaired when replacement part is received. Hood ventilation filters cleaned each week; grill hood in the process of being cleaned upon my arrival. Hand wash sinks equipped as required. Open space to outside located between walk-in freezer and paneled wall has been sealed. Discussed resurfacing counter where wet dishes are placed when removed from dishwasher.

Discussed proper manual dishwashing technique. Discussed the need to remove unused equipment from food service establishment. Septic effluent was not observed in wooded area where septic effluent was previously observed.

Comments: Knotty Pine Diner, inspection conducted Tuesday post-lunch rush. Cold holding and hot holding food temperatures observed to be adequate at time of inspection. Cold holding pasta, 41F, prep table tomatoes, 39F. Steam-table items: ham, 160F, mashed potatoes, 190F, and soups, 155-170F. Refrigerators observed to be adequately maintained clean and have thermometers installed. The door seals of the prep cooler have been replaced. The hood vents over the cookline have been recently cleaned, discussed schedule and frequency of cleaning. Ansul system inspected June 2017. Discussed with office manager, Roseanne G., the perceived lack of established cleaning procedures and/or schedule, and an additional inspection will be conducted prior to the end of December. A tour around the perimeter of the property revealed the lack of any standing or pooled water. The lawn area of the leach field continues to be soft and unmowable.

All contents were discarded. Discussed with staff the use of coolers and ice to help get through weekend operations. Discussed re-inspection in two weeks, but additional follow-up will occur this week.

Soups, sauces, and gravies were rehaeting in the prep kitchen; temps checked, and reheating procedures were discussed. Vegetable beef soup reheat temp adequate: 185F. Cold holding tomatoes in the deli prep cooler were found at 40F, and cooled prepped spaghetti pasta was adequate: 39F. Product stem thermometers, and refrigerator thermometers available throughout. Areas of damaged flooring in the kitchen have been fixed/replaced. Discussed cleaning schedule of walk-in cooler and freezer. Discussed with prep-cook Rich, and manager Roseanne, the removal and/or replacement of aging and damaged salad bowls. Discussed with manager, the future use and relocation of the barbeque pit. Barbeque pit shall not be used in its current location; facility owner/operators shall submit a notice of intent to MCDOH, prior to relocation and re-use of the BBQ pit. Hair restraints and hand barriers used.

Sanitizer buckets utilized. Product stem thermometers(3) available. Discussed/reminded cook, Rich, that the seasonal outdoor barbeque pit can not re-open in its current location. Please submit plans and a Notice of Intent regarding established plan for the relocation of the barbeque pit when available.
