Lunch was plated and delivered at 11:30am. Italian noodles, cheese pizza, and cooked carrots and peas; temps after service observed, 143F. Discussed KP worker training; the kitchen uses inmates for staffing help in the kitchen. The ice machine has been de-energized; the ice machine was primarily used by corrections officers. The facility has purchased and installed: two 2-door reach-in refrigerators, and two 2-door reach-in freezers. Internal Thermometers will be installed when delivered next week, digital installed thermometers available. Hair restraints and hand barriers utilized. Discussed and observed the Thanksgiving turkey cook and cooling procedures. Cooled turkey breasts observed at 39F. Hood was professionally cleaned, 7/20/18, and the Ansul system was inspected 4/29/18. Staff is complimented for cleanliness and procedures. |
