Cold holding tossed salad observed, 40F. Product stem thermometers (2), calibrated and utilized. School district is comlimented for improved cold holding practices for tossed salad. Kitchen equipment maintained clean and sanitary.

Green beans observed holding, 192F. Discussed repeat violation, lack of wall maintenance and repairs behind the mechanical dishwasher. Hair restraints and hand barriers/gloves worn. The upright reach-in freezer is not functional. Discussed the cold holding procedures within/amongst the schools and suggest that this school install an ice machine to assist with cold holding of salads and fruit cups during service and display. Cold holding temps adequate, pre-chilling techniques encorporated/used. Food contact surfaces and equipment adequately maintained clean and sanitary.

Discussed utilization of colander for food preparation; food preparation sink is not equipped with an in-direct drain. Discussed storage location of refuse containers relative to hand wash sink. Ventilation hood and filters adequately maintained. Commercial high temperature dishwasher operated in accordance with manufacturer instructions; wash temperature observed at 152 degrees Fahrenheit and final rinse temperature observed at 186 degrees Fahrenheit. Wall below drainboard of two compartment sink has been painted and is in good repair.
