Comments: Canastota High School, inspection conducted Wednesday during final prep and lunch service. Pizza and deli sandwiches for lunch today. Cook temps observed; bbq rib pizza 188F, chicken bacon pizza 175F, and chicken patty 174F. Cold holding sandwiches and salads found adequate. Discussed continual improvements/changes in routine to help maintain cold holding temps throughout entire service time to include using ice bathes instead of the cryo-paks, and moving items back and forth to the walk-in cooler between service-lines. The condenser and compressor of the refrigerated well of the service counter was being replaceded by B&B Refrigeration company at time of inspection. Thermometers are installed in all coolers. Digital stem thermometer used. Discussed the repair in progress of the wall behind the garbage disposal of the mechanical dishwasher. Dishwasher observed to be working as per manufacturer's specs. Canastota Central School is contracted with Orkin for pest management.

Salads, sandwiches, wraps, etc. are placed within walk-in refrigerator between lunch periods (for approximately 20 minutes). Encourage use of additional cold holding mechanisms for parfaits, wraps and sandwiches. Discussed discontinuing the practice of assembling hot sandwiches prior to service. Product stem food thermometer evaluated for accuracy. Commercial dishwasher operated in accordance with manufacturer instructions; final rinse temperature of 190 degrees Fahrenheit observed.
