Discussed cooling process utilized for bbq pork; discussed ensuring that pork is not stacked during cooling and that pork is left uncovered during the cooling process. Receipts for food product available and were reviewed at time of inspection. Discussed discarding mop water in the morning prior to beginning food service operations. Food stored off the floor as required. Improvement observed in regard to removal of personal belongings from food storage area leading to upstairs apartment. Self-closing fixture has been installed on bathroom door. Soap observed at all hand wash locations. Several ceiling tiles have been replaced above the three compartment sink.

Comments: No.1 China Garden, inspection conducted Thursday afternoon, post-lunch rush. Cookline Hot holding and rice cooker holding temperatures adequate. Cold holding deli prep unit items and walk-in cooler items found at adequate temperatures, 35-43F. The upright residential freezer has been replaced by a new trunk freezer. Improved overall cleanliness was observed during this inspection. Discussed a time line to address required repairs, ie. walk-in cooler thresh hold. Discussed the need to refile/re-apply for the wc/db waiver (CE-200).

Comments: No.1 China Garden, inspection conducted Friday afternoon. All hot holding and cold holding temperatures adequate. Walk-in cooler items found at 36-42F. Prep-cooler items found at 40F. Deep fried chicken cook-temp observed, 166F. Hot holding rice adequate, 157F. Discussed previous inspection history and repeat violations. The hinge on the trunk freezer has not been replaced, but the lid and trunk maintain a tight seal and freezer capacity. There is no bare wood amongst the flooring, but the floor tiles throughout the restaurant are mostly cracked and damaged. Flooring has been repaired or replaced where needed. All food in the walk-in cooler is adequately protected/covered and found at proper temperatures. Hair restraints and hand barrriers are used. Choking poster, cpr station, and permit are posted.

Prep cooler is maintained sanitary, door seals have been recently cleaned. All prep cooler items are at adequate temps, 35-40F. Hot holding rice adequate at 152F, pork ribs cook temp observed, 170F. Hair restraints and hand barriers utilized. All walk-in cooler temps adequate. Discussed time-line for installation of new threshold into the walk-in cooler.

Improvements have been made in regards to cleaning floor below and around equipment, a regular cleaning schedule is required. Interior of refrigeration/freezer is clean at time of inspection. Cot and table have been removed from kitchen food storage area. Observed good improvement since previous inspection, discussed overall up-keep of facility to include kitchen, storage, and dining areas. Discussed that floor on right side of walk-in refrigerator will need attention in the near future. Ventilation hood is scheduled for professional cleaning during the month of February.
