Cold holding deli prep items found at adequate temps; 39F. Hair restraints and hand barriers utilized. Digital thermometer utilized.

Meatballs and cooked noodles held at temperatures ranging from 149-155 degrees fahrenheit during hot holding. Numerically scaled indicating thermometer observed in all refrigeration units. Product stem food thermometer utilized and is accurate at time of inspection. Commercial dishwasher operated in accordance with manufacturer instructions; wash temperture at 151 degrees fahrenheit and final rinse temperature at 185 degrees fahrenheit. Wall has been repaired as required. Refrigerator door seal has been replaced as required.
