Some stainless containers are used to store sliced tomatoes at make line near service window- maintain level of ice at same level as tomatoes (actual temperatures were less than 41 degrees F). Checked temperatures of refrigerated units used to store potentially hazardous (TCS) foods during inspection- maintained at less than 45 degrees F. A TTOC date of November 4, 2014 has been established to correct violations listed above. A re-inspection will be conducted after this date to determine compliance. |

Comments: Re-inspection conducted due to repeat violations of 5A (cold-holding of potentially hazardous foods). 5A was not in violation at the time of this re-inspection. All potentially hazardous foods in make-units, both in the top section and bottom section, and in walk-in temped between 35 dF and 43 dF. Sliced cheeses in the top of both make units are in thermo-pan inserts with lids on. Shredded cheese (and crumbled blue cheese) are in thermo-pan inserts stored in the bottom sections of the make-units. Sliced tomatoes in stored in the top section of both make-units are in a metal inserts that are covered and are kept in an ice bath. Temperature logs are maintained for these items. | ||
