Comments: The following items have been corrected from previous inspection: 10B) Facility has replaced duct tape with foam seal on door gasket of glass door refrigerator across from wok. Discussed that foam is a temporary fix and will need to be replaced with a new door gasket. 11D) Fan covers in walk-in have been cleaned. 14A) Facility has cleaned all surfaces contaminated by rodent feces and pest control operator has been in and put down new sticky traps/bait stations. Gaps in walls along pipe chases have been sealed with expanding foam and small section of wall in disrepair has been fixed with a panel of stainless steel, both in rear section of kitchen area. Corner of floor next to 3-bay sink, which had contained build-up of food particles has been cleaned. Manager indicated the grease trap had been cleaned.

Observed other time and temperature control for safety (TCS/PHF) food in walk-in cooler at temperature of 36dF. Observed raw shrimp in top of cold holding make unit at temperature of 38dF. Observed fried rice in warmer at temperature of 163dF. Reviewed procedures for writing down time in regards to hot and cold holding waivers on buffet and sushi rice in walk-in cooler.

The following items have been corrected from previous inspection: 5A/8E/11D) Facility has obtained a new refrigerator which has accurate thermometer inside reading temperature of 40dF. 8B) Dipper well is fixed. 11C) Facility has removed cutting board from make unit across from cook line. 12A) Hand wash sink in waitress prep station fixed. Observed times written buffet tables indicating 4 hour discard time. Discussed wavier conditions for sushi rice.

Comments: Checked walk-in cooler during inspection- food temperatures of cooked chicken acceptable, less than 42 degrees F. Operator was maintaining food depth of cooked chicken at less than 4"in. Also, temperatures of cold potentially hazardous (TCS) foods at the Mongolian Wok area acceptable, were less than 43 degrees F. Floor tiles repaired in kitchen area, are using a stainless scoop with handle to dispense cooked rice in steam unit in kitchen. Thermometer was available inside kitchen sandwich storage unit across from kitchen cook line- interior temperature was 41 degrees F. Will conduct a HACCP training exercise in near future.

Comments: A Time Table Of Compliance Date of October 1, 2016 has been established to correct the remaining violations listed above. A re-inspection will be conducted after this date to determine compliance. Manager stated that Orkin Exterminating continues to do monthly treatments, no roaches or rodent activity was noted during inspection. Discussed routine employee hand washing and proper use of utensils and equipment with Manager during inspection.
