Comments: Recommendation: As Cook was alone and needed to prep Mac & Cheese in between serving customers, the food should have been broken down into two shallow pans (as he needed to be instructed to do) and placed uncovered on an upper shelf in walk in cooler (upper shelf, so nothing falls into the food) for proper cooling. Once cooled, then the food is to be covered. —- At the time of cooking a few 1/2 pt. servings could have been packaged for current use and properly hot held. The remaining Mac & Cheese that has been properly cooled can then be packaged into servings when time allows and food is out of the temperature danger zone.
