This sink should have hot water tempered to no grater than 110ºF by means of a single leaver faucet or mixing valve. Liquid hand soap in a sanitary dispenser, paper towels and proper signage are to be supplied at sink. ==================================================================================================== 2) This full service restaurant lacks a properly installed food preparation sink. As such, a dedicated food sink (culinary sink) is required. Sink must have an indirect waste-line connection (an air gap) to prevent a sewage back up from entering the sink basin. ================= You may modify the current 2-compartment sink to comply. A properly installed permanent shield to prevent splash over from hand washing will be needed to separated the hand was section from the food preparation section. An air gap will be needed for the food section waste line. Both sections require hot & cold running water. Hot water of at least 140ºF is required for the culinary side, tempered hot water not to exceed 110ºF is required for hand washing. This may be accomplished by use of a single leaver faucet or mixing valve for the hand wash side. If the current 2 compartment sink can not be brought into compliance as outlined above, one or more new sinks will be required. New sinks MUST BE NSF APPROVED and the culinary sink is to have coved corners and no hard to clean areas. COMPLIANCE IS TO TAKE PLACE WITHIN 30 DAYS. |
