Comments: Education given on all deficiencies. All violations may be subject to enforcement. James Chapman present in back of facility at time of inspection. Dale Andrews, head chef, present at time of inspection. 2 door stand up cooler temperatures adequate. walk in temperatures adequate. Bain Marie temperatures adequate. Dale Andrews stated that he was going to run errands and would not be present to review report with this inspector. Dale asked that they report be emailed. Upon discussion, Dale was informed that the inspection report would be emailed to the owner, James Chapman and the facility email and emails were verified with him at time of inspection.

Comments: Cooler cited in the previous inspection was found to be holding acceptable temperature. Operator states a fan was blocked and required cleaning. Temperatures taken of food items and in refrigeration were found to be acceptable unless noted. Discussion with the operator: crates of dirty dishes were found piled up at the back of the dish area. Operator states that they do catering in the area for barn venues and the train. Operator states that the company has a catering permit under the Rhincliff hotel, part of the LLC, in Rhinebeck, NY Dutchess county. Oneonta office will review and potentially upgrade to catering permit in our district.
