Comments: Discussed deficiencies with the operator. The temperatures of potentially hazardous food items in both refrigeration units was 43 degrees F or lower. Vegetable Beef Soup being held over low heat was measured to be over 200 degrees F. The. Fire Suppression System was inspected in June 2015 nod the rinse on the Mechanical Dish Washer has a chlorine residual of about 50 ppm. Had a brief conversation with the operator about cooling procedures. Cassie said that the new owner, James Chapman, will be taking over the operation of the cafe in a couple of weeks. She also stated that he was told to contact our office before he takes ownership of this facility. Report e-mailed.
