Observed raw chicken and beef in cold holding make-unit at temperatures of 42F. Discussed with operator storing all potentially hazardous foods/time and temperature controlled for safety (phf/tcs) foods below fill line in make-unit to adequately cold hold 45F or less. Observed 25 pieces of cooked pork under active cooling in the walk-in refrigerator. Cooked pork pieces were all less than 6 lbs and separated in a bus tub. Sanitarian calculated that pork was meeting cooling schedule of 120F to 70F in two hours and 70F to 45F in an additional 4 hours. Observed employees washing hands after times of contamination (i.e. dumping liquid waste from bottom of roasting oven). Observed adequate hand-washing supplies including soap, hot water, and paper towels. |
