Comments: Observed accurate digital thermometer at time of inspection. Observed raw chicken and beef in cold holding make-unit at temperatures of 42F. Discussed with operator storing all potentially hazardous foods/time and temperature controlled for safety (phf/tcs) foods below fill line in make-unit to adequately cold hold 45F or less. Observed 25 pieces of cooked pork under active cooling in the walk-in refrigerator. Cooked pork pieces were all less than 6 lbs and separated in a bus tub. Sanitarian calculated that pork was meeting cooling schedule of 120F to 70F in two hours and 70F to 45F in an additional 4 hours. Observed employees washing hands after times of contamination (i.e. dumping liquid waste from bottom of roasting oven). Observed adequate hand-washing supplies including soap, hot water, and paper towels.

Comments: Reinspection conducted to verify correction of violation 5C: not storing potentially hazardous foods under refrigeration or hot-holding (room temperature storage), which was observed during inspection conducted earlier in 2018. No food items stored improperly during reinspection. No other items evaluated, however a HACCP exercise was conducted with manager.

Discussed working in small quantities and 15-20 minutes periods when preparing all TCS/PHF items that are brought out of cold holding, such as previous cooked and cooled noodles. Observed facility properly cooling items in their walk-in cooler at depths no more than 4 inches. Discussed cooling all TCS/PHF items to 45F prior to placing in top section of make unit as the top section is not meant to cool items, but to cold hold previously cooled or raw items at 45F or less.

Item 8A - buckets of food observed on the floor, Item 8D - potentially contaminated bags used to line wall behind 3 bay sink, Item 11A - facility lacking test strips to evaluate bleach solution, Item 11C - sanitizer not used to sanitize dirty dishes, Item 11D - dirty surfaces on slotted metal shelves in walk-in cooler, Item 12D - toilet room door propped open, Item 15A - dry wall in disrepair, walls in cooler dirty surfaces, dirty floor throughout facility, blue bags covering wall behind 3 bay sink, and Item 15B - nonfunctioning light fixture in rear storage area all have been corrected. All other violations given TTOC for 10/25/17. Observed several previously cooked food items cooling in walk-in cooler at a rate that will meet the required cooling schedule. Discussed cooling in pans at depths of no more than 4 inches.

Discussed adequate cooling methods - the fried chicken was observed being cooled by appropriate method (in walk-in cooler on slotted shelf, no cover, at a depth of less than 4").
