Comments: The refrigeration unit located next to cook line had a temperature of 39 degrees F. The refrigerators all had working thermometers. Facility fairly clean and organized. Shed has been improved new window and the ceiling repaired. All hot holding temperature above 140 mac and chees 165. Discussed the addition of the ice cream stand and the impact to the septic system. Operator indicated he has talked to Claude and because he is using air cooled soft serve ice cream machines and no dipper well as well as not increasing his seating the septic will have minimal impact therefore ok. (Follow up with senior San or Claude in office) lot of water is puddled around the leach field because of extremely wet weather as of late. some of the water on the back side of the leach field looks muddy/ murky it could be from run off but should be monitored during dry season. No odor present.

Signs are on the door all refrigeration units are working properly and proper cooling methods are being used. Both refrigeration units in waitress station are running near 45. I informed the operator he may want to turn them down.

Comments: Facility leach field appears to be functioning properly. A large puddle is present around the edge of the mound, but no odor present and water appears to be natural runoff/snow melt. Majority of the floor in the kitchen, walkin cooler, and dining room has been replaced. Last portion under kitchen equipment will be also be replaced after some utility work can be completed.

Comments: facility is clean and organized. holding temps measured during inspection were acceptable. facility leach field, no signs of failure at time of inspection, but facility did plant a garden with some fruit trees along the outer edge of the leach field. operator stated these are not atop the leach field. operator is planning to remove a small chargrill unit from the cook line, no intention to replace it at this time. operator has also acquired laminate flooring for the dining room and kitchen, plans to install in the next month or so.
