Food is transported and stored in Cambro insulated containers until service, where food is held on sterno steam tables. Food is served self service style for an hour. All food is left with guests an none is saved and cooled. All food is prepared the day of service in the smoker and other items are prepared in the stove. The thermometer was digital and working. Three bay dishwashing was discussed. An employee sick foodworker policy was discussed. All cold holding temperatures were found to be acceptable. The menu was reviewed at the time of inspection. No violation was observed at the candy store. |

Per interview, the chicken would be cooked to 175 °F and the pig to 185 °F. |
