Comments: Only catered meals are served to the public. Inspection was performed in preparation for a fish and game club meal. Pulled pork will be served, Chickens, Baked potato, corn, peas, Dinner rolls, cupcakes. Food is transported and stored in Cambro insulated containers until service, where food is held on sterno steam tables. Food is served self service style for an hour. All food is left with guests an none is saved and cooled. All food is prepared the day of service in the smoker and other items are prepared in the stove. The thermometer was digital and working. Three bay dishwashing was discussed. An employee sick foodworker policy was discussed. All cold holding temperatures were found to be acceptable. The menu was reviewed at the time of inspection. No violation was observed at the candy store.

Comments: The gaskets are on order from total repair and will be installed when they arrive. Operator was prepping for the Crown Point Cancer walk on the weekend. Corn, baked beans, baked potato, chicken and a whole pig. The pig will be cooked in the facilities commercial smoking unit. The pig was purchased from US foods and was on site with a USDA stamp. Thermometer was on site, discussed cooking temperatures with operator. Per interview, the chicken would be cooked to 175 °F and the pig to 185 °F.

Comments: Cooling logs were reviewed and found to be acceptable. Cooling curve was performed on the potatoes and found to be acceptable. Prep and service for weekend events were observed and reviewed. Beef brisket, chicken and pulled pork are served as the main dishes. Potatoes salad, cupcakes, and bbq sauce are on the side.

Comments: Facility was preparing for a catering event. Smoker was being used and lock was observed on unit. Operator reported that unit is locked when they are not on-site. Reviewed outstanding enforcement action and extension was granted on two outstanding abatement actions (see report). Reviewed menu and food prep. One working thermometer is on-site. Recommend purchasing additional thermometers. Discussed reuse of salad dressing containers. Proposed kitchen plan has been approved; however, hand wash sink will need to be installed next to 2 bay sink. Additional refrigeration and/or ice machine may be needed.

This is a problem in the summer with flies when the insulated door is not closed. It must be fixed prior to the door being left open in the summer.
