Thermometers were calibrated on site and found to be accurate. Three bay dishwashing was discussed. An employee sick foodworker policy was discussed. All cold and hot holding temperatures were found to be acceptable. The menu was reviewed at the time of inspection.

Comments: The freezer went down the morning of inspection. Items within were starting to thaw. All temperatures were 45 °F or below. The repair technician arrived on site to service the unit at the time of inspection. If the unit cannot be fixed, items will be transferred to the walkin cooler and /or discarded as needed. Discussed thanksgiving turkey meal. The turkeys will be cooked on monday and quartered and cooled in shallow metal pans in the walkin cooler. Reheating to 165 within 2 hours was discussed. Pasta was served with bread, and sauce. TPHC (time as a public health control) forms were reviewed and found to be acceptable.

Comments: Dishwaser was working, thermometers were calibrated, TPHC forms were reviewed. Staff requested to use a form that is not the same for as initially approved. The form that is being used to document TPHC information is not the approved for TPHC log that our office approved. The production log does not have the standard heading and includes additional information. You must use the approved form until the new one can be reviewed by supervision.

Time, temp and discard times were reviewed and found to be acceptable. The dishwasher was working at the time of inspection, thermometer calibration was discussed. A hand wash sticker was supplied for the employee bathroom. The hand wash sink was installed and must be accessible at all times.

The dishwasher was operating properly at the time of inspection. The walkin cooler and freezer have been installed and are being wired with new shelving. All surfaces are appropriately designed.
