Refrigeration logs maintained and reviewed. Commercial low temperature dishwasher final rinse temperature observed at 120 degrees Fahrenheit with sanitizing agent present; discussed dishwasher cleaning requirements as per Subpart 14-1.113 (Encourage maintaining a cleaning log for dishwasher). Ice machine located in basement is non-functional at time of inspection. Improved organization observed in basement storage area near walk-in freezer/keg refrigeration unit(s).
