Comments: Conducted a re-inspection due to previous violations noted on inspection report of 10-24-18. RE: Blue Item #15A- Section of kitchen ceiling above deep fryers has been replaced, is now smooth and easily cleanable- Corrected. Per Carol, the walk-in freezer unit is not being used for storage of frozen foods. All frozen foods are being stored inside new chest freezers located in kitchen. Also conducted a HACCP training with Asst. Manager during re-inspection.

Comments: Conducted a re-inspection to evaluate walk-in freezer and follow-up on violations from previous inspection report of 6-28-18. Regarding walk-in freezer, previous ice condensate build-up problem is greatly improved after recent service repairs to equipment. No foods were impacted inside freezer, shelving is clean without ice build-up. Facility is also utilizing two smaller chest freezers for storage which are located in kitchen. Other violations from previous inspection report have been corrected- Floor surfaces along kitchen cook line clean, also floor surfaces inside walk-in refrigerator. Per Operator, ceiling above kitchen deep fryers is scheduled to be repaired in near future by contractor. A revised Time Table of Compliance Date of November 20, 2018 has been established to correct the violations listed above. Will conduct a re-inspection after this date to determine compliance. Will also conduct a HACCP training with cook staff in future.

Comments: A Time Table of Compliance Date of July 20, 2018 has been established to correct the violations listed above. A re-inspection will be conducted after this date to determine compliance. Cook was observed prepping raw meat during inspection and was using plastic gloves and utensils. Discussed proper use of plastic gloves and routine hand washing with cooks during inspection. Also discussed proper cooling of cooked potentially hazardous (TCS) foods including use of cooling wands for cooked soups, limiting cooked phf food depths to less than 4" inches, leaving cooked foods uncovered after storage inside of walk-in refrigerator and stored at less than 45 dF during active cooling. Walk-in refrigerator interior temperature was maintained at less than 45 dF, some ice build-up was observed below condenser drain line- no food items were impacted. Numerical thermometers available at kitchen cook line for evaluating hot potentially hazardous foods.

Reminded cook that potentially hazardous/time and temperature controlled for safety foods are to be kept at 45F or less. Temperatures of phf/tcs foods in walk-in refrig 45-46F at time of inspection. Observed bottles of water, other beverages stored ice in bin at bar, which, per employee, is used to keep fountain sodas cold and not used in drinks. Explained to employees that ice which has been used to store beverage bottles shall not be used for drinks. A timetable for correction of items above for one week (7/15/2015) issued, except for violation 15A, which is to be corrected by 8/14/15.

Comments: Per Pat, walk-in cooler was inspected by technician yesterday. The tech spent a majority of time inside the walk-in and not outside. All food items in walk-in at temp of 34-36 deg F. The 2 hanging thermometers in the walk-in were ~34 deg F. I hung my thermocouple in the walk-in for 5 minutes -temp of 34 deg F. The technician is scheduled to return on Friday or Monday to adjust in case unit is operating too cold. A 2 week ttoc, 5-2-13, has been established for all issues cited on yesterday's inspection. Since the weather has begun to warm up, the storage racks in the walk-in cooler and freezer will be power washed shortly per Pat.
