Reviewed with employees how to calibrate probe thermometer. Discussed with employees proper procedure for using gloves to avoid bare-hand contact (washing hands before putting on gloves and any time they change gloves). Temperature of meatball in pasta sauce at time of service was 165 dF. Temperature of pasta at time of service was 162 dF. Interview with operator indicated that they do not use a regular pest control service at this time as they are not having any issues. Discussed with operator pest control measures that are acceptable without a DEC-licensed operator and measures that would require a DEC-licensed operator. |
