Comments: 2E--Establishment manager stated, when asked, that he did not take the temperature of the meat balls after the intitial cook. The meat balls in the hot hold unit temped at 120 degrees using the inspector's calibrated FTT. When the establishment's FTT was located on the top shelf above the prep table, it was compared to the inspector's calibrated FTT. Establishment's FTT measured 186 degrees while the inspector's FTT measured 162 degrees while in the second hot hold meatball bin. 7G--Bin of meat balls in hot hold unit measured 120 degrees using the inspector's calibrated FTT. Manager stated that product was microwaved and then put into the hot hold unit < 30 minutes ago. No temp. measured by the manager when it came out of microwave. Product is reheated to ~180 degrees and put back into hot hold unit to maintain >=140 degrees until served. Corrected. 11A--3 bay set up found to be rinse, wash, sanitize, with the sanitzer level reading less than the required 200 ppm quat. Sanitizer container found empty, no back up sanitizer found on premisis. 16--CPR equipment is present in the kitchen, but no sign found posted in dining area. Food permit not found publicly displayed. |
