Comments: 7f- at time of inspection, this inspector found red sauce in steam table that temped at 69dF been in there about 1 hr per cook allowed to reheat to 165dF. Also broccoli cheddar soup in hot table temped at 121dF. been in there since 11:00am more than 2 hrs voluntarily discarded and corrected. Cannot reheat foods in steam table.corrected 5a+5e+1H- at time of inspection, this inspector found moldy pastas on line koch cooler one temped at 66dF and the other temped at 65dF. Ambient air in unit was 66dF. Also found moldy lettuce in same unit and that was voluntarily discarded. All above foods were voluntarily discarded and corrected by chef 5a+5e- at time of inspection another koch cooler ambient air was 55dF. Temped 2 bags of french fries and found them to be 53dF. chef voluntarily discarded both bags and corrected 11d- there is a lot of ice build up in walk in freezer corrected 6b- at time of inspection, this inspector found deep pot of very thick sauce with ground beef and sausage about 8 inches deep and 16 inces wide in walk in cooler. no way it could have properly cooled. Sauce voluntarily discarded by chef and corrected 15a- produce cooler floor is rusting corrected 14a +14b-fruit flies present especially in dish wash area where there are alot of dirty dishes corrected 15a- floors under equipment and sinks are dirty corrected
