Comments: Thick cream based soup and a thin french onion soups were observed reheating in the steam kettles by the mixers. Per interview with staff they were placed there at 8:15 am. Temperatures were measured at 8:45am to be 67-90 °F and retaken 9:00 am and found to be 100-109 °F staff turned the unit up between measuring and ultimately it could no be determined if it would reheat within 2 hours and it was placed on the stove top for rapid reheating. Reheating on the stovetop prior to placing the soups in the steam kettles is strongly recommended.

Comments: cutting boards at the prep covers were starting to show signs of wear. They must be repaired or replaced once they are no longer smooth and easily cleanable. The dishwasher sanitizing solution was low at the time of inspection, you must use test strips and prime the unit as needed to ensure it is working properly and change sanitizer when it runs low.
