Comments: Smoked salmon was stored in the bottom of the reach in at 39 degrees F. Smoked fish must be stored at or below 38 degrees F. During the inspection the food service worker corrected this potential violation and placed the smoked salmon on ice in the cooler. Facility thermometer is accurate. It is recommended that a second thermometer be obtained for redundancy. Quaternary Ammonia test strips were present and sanitizer levels at bar sink and three bay sink were at acceptable levels. Please store test strips in a dry location. Per interview all prep is completed at Simply Gourmet. Soup was observed in hot holding crock at 140 degrees F. Per interview, soup is reheated in this unit but temperatures are not tracking. Soup was being hot held at 140 degrees F. at 1:20 pm. Soup had been placed in the unit at 7:00 am but temperatures are not monitored. Soup must reheat to 165 degrees F in 2 hours. Please verify that this unit is capable of rapid reheating. If it is not capable reheating should be done on stove top prior to hot holding. Cooling of soup is done on occasion. Discussed proper cooling methods.
