Discussed the following: obtaining chlorine test strips for kitchen sanitizing solution; proper cooling procedures for cooked chicken wings; method of reheating pre-made / cooled soups (per interview with cook Bill Thony, soups are first properly reheated on stove to at least 165 degrees F (or boiling) prior to transferring to crock pot, which holds soups at minimum of 140 degrees F. Please fax copy of thermometer receipt to Monticello District Office at 845-794-3165 (attention to Ashley Peters-Blume, from Welsh's Cabin) within 2 days, or by email at [email protected]. Will verify availability of thermometer at time of surveillance sample collection.
