Comments: Observed cardio pulmonary equipment and proper sign posted at facility. Is a NYS compliant kit. The former on-site water supply and treatment system is disconnected from the facility water supply piping. Facility has been now connected to the Cobleskill Water District. Wastewater is also discharged to the sewer district. Salad sandwich preparation counter cooler unit fine this year. Adjusted the location of the thermometer to warmest location of shelves. Temperatures in degrees Fahrenheit. Temperatures of items were 41 to 44 depending on the position, top of container warmer, bottom colder. premade Tomato basil soup being reheated , is at 131 , final temperature must be at least 140 since it is a commercially prepared product, prior to service. several minutes later it was at 140 discussed with staff the different temperature requirements between commercially prepatred items toi be cooked and items prepared on-site, cooled and then reheated. fresh made chicken soup is prermade so 140 is goal. was at 178 degrees. |
