Comments: 16- cpr kit is not available 5b +2e- at time of inspection, this inspector found about 25# of cooked chicken wings in a 5 gallon bucket at room temperature about 12 inches deep at 82dF. Cook stated she par cooked and did not temp them. Since of temp of chicken was unknown and it had been 2 hours since they were cooked wings were voluntarily discarded by cook and corrected. Proper cooling procedures were reviewed 10b- some shelving in walk in cooler is rusting 4a- at time of inspection this inspector found 2 spray bottles not labeled for contents and found to be bleach water and degreaser. Cook labeled both and corrected 2e- 2 food testing thermometers at time of inspection in ice bath temped at 20dF and 48dF. This inspector calibrated the thermometers and corrected |
