Eggs were moved to bottom shelf, away from ready-to-eat foods by cook. CORRECTED. 5A & 5E - At 1:45 PM, lunch meats and cheeses were temped at 49 degrees F to 53 degrees Fusing inspector's digital thermometer in cold hold unit above cooler, across from cook line. Additionally, at 1:45 PM, tomato sauce in cold hold unit above cooler near pizza ovens temped at 50 degrees F to 55 degrees F using inspector's thermometer. According to cook, the lids of the coolers had been opened at noon. Bottom of both cooler units temped at 43 degrees F and 44 degrees F. Coolers were adjusted to a lower temperature, and cook moved meats, cheese, and tomato sauce to walk-in cooler in order to rapidly chill foods. Recommended keeping smaller portions in cold hold units. CORRECTED. 11A - Chemical dishwashing machine is not sanitizing properly. 8E - Sub cooler is missing an accurate thermometer. 15A - Dust and mold build-up in walk-in cooler in kitchen (food prep) area , on ceiling and on fans 12E - Paper towels are missing in men's bathroom in back room. CORRECTED.
