Breakfast was English muffins but much lunch prep was in process. Salads were being made and frozen food being panned for the oven. Dish washer final rinse temp 185 F

Comments: eggs in the walk-in cooler from local source the eggs were dated and labeled with farm information. eggs did not have a grade on the package. there was also a larger box of 10 to 12 dozen eggs labeled for sale that did not appear to have farm information on the packages. all cold holding temperatures were good during the time of inspection. all hot holding temperatures checked were above 140 degrees F (toasted cheese in the warmer, tomato soup).
