Per interview with the operator, the thermometer was used at multiple times during the day to measure TCS food temperatures. A logbook of these temperatures was provided to the inspector for review at the time of inspection. The quaternary ammonia in the sanitizer bay of the dishwashing sink had a concentration of 200ppm. The beef patty in the fridge below the flat top grill had a temperature of 40°F. The chicken tenders in the refrigerator next to the fryer had a temperature of 36°F. All refrigerator storage had accurate thermometers. All food was stored properly off the floor. |
