Temperatures measured during the inspection included- chicken in the walk-in cooler: 36 deg. F, crab meat in the walk-in cooler 38 deg. F, sliced tomatoes in the top of the deli-style cooler: 42 deg. F, and liquid eggs in the refrigerator by the cook line: 42 deg. F. Recommendation: Keep the dish racks off the floor during storage, helping to keep unnecessary dirt/contaminants off the dish racks.
