Cleaning staff were observed to be cleaning and packing up kitchen. Product thermometers were already stowed away in storage bags. Reach-in cooler unit temperature 38F.

Comments: Discussed cooking and cooling procedures with cook, Aron, and kitchen manager, Rabbi Schwartz - ok. Hot-held potato kugel measured to be 188 degrees Fahrenheit at time of inspection- ok. Measured temperature of a separate potato kugel cooling in reach-in cooler to be 60 degrees Fahrenheit. Per Aron, item (1 and 1/4 shallow trays) were cooked, partially cooled and transferred to cooler at approximately 12 pm once the temperature dropped to 145 degrees Fahrenheit. Discussed keeping items uncovered during cooling.
