Comments: Visit prompted by complaint of illness.Inspection performed. Discussed ill food worker and responsibility for notification to HDO in the event of food borne illness outbreak. Manager indicates that no staff are presently ill. Also,that manager was not informed by staff member that an illness call had been received. And that a log is maintained in house by him, for said occurrences. Reviewed storage,preparation,and cold holding with respect to items indicated in illness report. No appearance of deviation in safe handling indicated. Dishwasher and sanitization methods ok. Salad prep cooler had been serviced earlier in a.m. of day of inspection. Service personnel indicated cooling issues had been resolved. Service call placed by manager for re-check asap. Instructed that no potentially hazardous foods are to be held in unit until it is able to hold at less than 45 degrees F. Inform HDO when unit is repaired for re-inspection of unit.
