The proper cooling of several foods were observed by different acceptable methods. Proper defrosting method was observed. New thermocouple metal stem probes were obtained per recommendation at the last inspection, thank you. The low temperature mechanical dishwasher is operating properly and tested acceptable at 50ppm chlorine residual.
