Comments: Kitchen is still in much better order than it was two months ago after complaint. Cooling is all being done correctly. All temperatures were adequate. Probe thermometer was available on site and was used while cooking chicken. Gloves & hair restraints used by all staff members. Discussed CIAA.

Comments: Kitchen is in better shape than it was previously. Cleaning has been done on several surfaces. Some cleaning still does need to be done but overall condition is a lot better. Walk-in cooler is the main area that needs to be cleaned still. Pest control applicator is coming regularly to set traps and rodent issue seems to be under control. Regular inspection is due in December, so it is expected that cleaning is kept up on and things will be even better when that inspection comes.

Comments: Complaint investigation. No rodents or signs of rodents were observed at the time of inspection, however, it was hard to tell given the filthy conditions of the kitchen. There was food debris and grease everywhere so it was hard to determine if there were any droppings from mice. They do have traps at the facility placed by a professional. They were suppose to come yesterday again but never showed up. Kitchen definitely needs to be cleaned thoroughly. Discussed usage of cleaning supplies and not spraying them near food items as to not contaminate them. Will be coming back to check on cleaning of facility. Will be in touch with owner to discuss cleaning and timeframe, as it needs to be done ASAP and cannot be put off.
