Comments: Discussed cooling of foods. Suggested cooling chart be maintained so that time and temperatures are legible. Also gave operator brochure on cooling and suggested re-training all personnel on proper cooling of rice and meats. Call our office with solution to soda drain problem. Operator also notes that the main drain to the building has the drain cleaner added to it daily. This problem may be due to plumbing error. The grease trap was recently replaced.

Comments: All other items from 9/18/17 inspection were corrected except cracks in counter. The operator has attempted to fix the cracks and will continue to look for another solution to this problem. We also discussed cleaning the floor of the front prep area more often. Operator has started to use charts to track cooling of foods.
