Corrected. 4A--Quat sanitizer measured a darker green then 400 ppm on the inspector's test strip and the school's test strip. Quat diluted to 200 ppm quat and ECO Lab Rep. was called by the staff to come out and recalibrate the meter immediately. Corrected. 6A--Chicken nuggets in service steam table temped @ 120 degrees F -- 124 degrees F using the inspector's digital thermometer. Chicken was voluntarily discarded by kithcen manager. Corrected. 7E--Before lunch began, 3 trays of sausage patties were temped. 1 tray in the hot box temped @ 145 degrees F -- 148 degrees F. The 2 trays in the service line steam tables measured from 140 degrees F down to 88 degrees F in different areas of both trays. All of these temps were taken using the inspector's digital thermometer. Kitchen manager stated that all sausage patties were put into service tables and hot box ~ 15-20 minutes ago. Sausage patties were reheated to > 165 degrees F and put back into hot hold to be > 140 degrees F until service. Corrected. 12D--No covered receptacles in employees ladie's restroom. Repeat 15A--Ceiling tiles are missing directly above cook line. 15B--2 lights are burned out in the dry storage room.
