Comments: Food testing thermometers are accurate. Cold holds are <45°F and cooler thermometers are in place. Sanitizer is to be ~ 200-400 quat ppm for wipe towels, and ~ 200-400 quat ppm for 3-bay sink as indicated on the manufacturer's label. Hand wash stations ok, 3-bay sink is wash, rinse ,sanitize, air day, mop sink has back flow preventer. Hand barriers used, hair is restrained. Choking poster, cpr kit sign, and permit are all posted in public view. Restrooms ok. Reviewed cooling procedures with management. 120°F - 70°F in 2 hrs then 70°F - <= 45°F in an additional 4 hrs. Time as Public Health Control is being adhered to. All "by the slice" pizzas are labeled with temp. when it came out of oven and the time to be discarded if not served yet. Both violations from inspection report dated April 20, 2017 have been corrected. REMINDER: SUBMIT CURRENT FORM U-26.3.
