"Stix" offers pizzas, subs and sandwiches, chicken fingers, soups, and other concession-stand-type pre-packaged snacks. Hot holding temps adequate: chix fingers 170F, bbq pork 169F, marinara sauce 180F, and soups 180 & 185F. Cold holding cooler items found at adequate proper temps.: deli meats 43F, tuna salad 39F, and sliced tomatoes 41F. Thermometers installed throughout. Digital thermometer utilized. Hair restraints and hand barriers are worn. A daily hot holding log is maintained. Restrooms available and found to be clean and sanitary. Hot holding temperature of food product including but not limited to chicken tenders and chili observed at temperatures of 155 degrees Fahenheit and greater. Cold holding temperature of food product maintained in upper portion of deli unit observed at temperatures of 44 degrees Fahrenheit and less. Product stem food thermometer(s) evaluated for accuracy. Hand barriers utilized as required. Proper manual dishwashing technique observed.
