Thermometers installed throughout. Product stem thermometers utilized. High temp mechanical dishwasher operating as per manufacturer's specs, rinse observed > 180F. In time since last inspection, the original booster heater was brought on-line, now two booster water heaters are used to maintain required temps. The wall at the handwashing sink has been repaired/fixed. Hair restraints and hand barriers are worn. All equipment and food contact surfaces observed to be maintained clean and sanitary. Comments: Edward Andrews Elementary School, Morrisville, cafeteria inspection conducted Friday at lunch. Meat Taco salads, deli sandwiches, and soup offered for lunch today. Hot holding temperatures adequate: meat 163F, soup 174F. Cold holding sandwiches adequate. Discussed the unfinished area at the penetyrations of the hand washing sink. Digital thermometers utilized. All equipment and surfaces maintained clean and sanitary. Discussed with the principal, that a "plan" will be submitted if a "sharing table" becomes a part of the daily operation. Staff is complimented for cleanliness.

Comments: Facility nicely organized and well maintained. Hot holding temperature of baked ziti and cooked corn observed at temperatures ranging from 173-198 degrees fahrenheit. Hand barriers utilized as required. Product stem food thermometer utilized and evaluated for accuracy at time of inspection. Refrigeration logs are maintained and were reviewed at time of inspection. Hand wash sink has been repaired; noted as out of service during the previous inspection. Shelving in basement food storage area has been relocated as a result of waste water lines.

Kitchen steam kettle drain plumbed so as to provide the required air gap. Pizza, cooked broccoli, ham & cheese sliders and vegetable beef soup adequately held for service at temperatures ranging from 146-201 degrees Fahrenheit. Ceiling in downstairs storage area has been painted; ongoing maintenance will be necessary. Discussed downstairs food storage area relative to waste water lines; two additional areas may require drip trays depending on items stored below. Facility is well maintained and nicely operated.

Hot holding temperature of chicken noodle soup is 190 degrees Fahrenheit and hot holding temperature of ziti is 196 degrees Fahrenheit. Refrigeration/freezer logs maintained. Dishwasher operated in accordance with manufacturer instructions; wash temperature is 160 degrees Fahrenheit and final rinse temperature is 182 degrees Fahrenheit. Discussed ideal garbage storage locations. Discussed steam kettle; although steam kettle is not currently utilized, drain line requires in-direct drain with one inch air gap.

Discussed pre-chilling ingredients prior to preparing for use in salads/sandwiches, observed adequate pre-chilling of ingredients. Refrigeration logs maintained. Large kettle pot is not utilized, however, discussed in-direct drain requirement for equipment should kettle be put to use.
